Crawford & Carruthers Inc. is searching for an experienced Executive Sous Chef to join the production kitchen at a luxury property in Kalahari.
The perfect candidate will have formal culinary qualifications and at least 8 years experience, ideally in a 5* operation.

Qualifications: Grade 12 Diploma or certificate in professional cookery.
Experience: 8-10 years in a professional kitchen

Job Responsibility and function:
The Executive Sous Chef at the production kitchen will look after the backbone of our operations. This kitchen will support all pastry items across the property, will do all the ordering for 4 kitchens.
It will provide weekly and daily orders. This kitchen will also venture into prepared staff meals that can be ordered in advance. This kitchen will become a training facility where we can hone the skills of our next generation of chefs.
Kitchen Operations:
Responsible for the cleanliness, stock control, organization, and standards of the storerooms and kitchens. This includes but are not limited to fridges, freezer, and dry stores.
Responsible for bulk production of goods in both pastry and hot kitchen for all kitchens with an emphasis on reducing waste and improving food quality.
Responsible for the day-to-day food
Responsible to send food to all kitchens at specific times with a key focus on minimizing delays.
Enforce cold chain management.
